Spaghettini with Green Sauce


1/4 cup of your favorite olive oil
8 cloves of garlic, finely chopped
2 cups of packed fresh flat-leaf parsley, finely chopped
1/4 cup of vegetable broth
Coarse salt, to taste
Freshly ground black pepper
12 ounces of spaghettini

In a medium skillet, heat the oil over medium-low heat. Add the garlic and cook, stirring frequently, until lightly browned, about 5 minutes.

Add the parsley and the broth and stir until just combined. Immediately remove the sauce from the heat and season with the salt and the pepper.

Meanwhile, cook the pasta in boiling salted water until al dente. Drain the pasta well and transfer to w warmed serving bowl.

Add the parsley-garlic mixture and toss well.

Season with additional coarse salt and pepper if desired.

Serve at once.
