Red Fried Rice


1/2 cup of cooked basmati rice 
2 tablespoons of peanut oil
1 small red onion, chopped
1 red bell pepper, seeded and chopped
8 ounces of cherry tomatoes, halved
2 eggs, beaten
Salt, to taste
Freshly ground black pepper, to taste

Heat the oil in a wokj until very hot. Add the onion and the pepper and stir-fry for 2 to 3 minutes.

Add the cherry tomatoes and continue to stir-fry for 2 more minutes.

Pour in the beaten eggs all at once. Cook for 30 seconds, then stir break the egg as it sets.

Lower the heat.

Add the cooked (and still hot) rice and toss it over low heat. Toss so everything is well blended.

Cook for 3 minutes.

Season to taste with the salt and pepper.

Serve immediately.
