Sam and Steve's Scrambled Eggs


1/4 cup of garlic scapes*, chopped
2 tablespoons of butter
6 asparagus spears, cut into 1/2-inch lengths
4 large eggs, lightly beaten
1/4 teaspoon of salt
2 tablespoons of milk
4 ounces of crumbled goat cheese

Melt the butter in a well-seasoned cast iron skillet; add the garlic scapes and saute for 1 minutes.

Add the asparagus and saute for 3 minutes more.

Add the salt and milk to the beaten eggs and give a quick beat to mix well.

Turn the heat down to medium-low and add the eggs. Stir the mixture until the eggs are almost set.

Remove the skillet from the heat and add the crumbled goat cheese. Stir the mixture just until the cheese begins to melt.


Slid the eggs and asparagus onto a serving plate.

Serve.


*Garlic Scapes: The flower head or bulbil of the garlic bulb.
