Starving-Student Fried Tomato Slices


Firm, almost ripe tomatoes
Beaten egg
Milk
Cracker crumbs
Butter
Salt
Freshly ground black pepper

Slice the tomatoes 3/4-inch thick.

Combine the egg and the milk.

Dip each tomato slice in the egg-milk mixture and then into the cracker crumbs.

Melt the butter in a hot skillet and fry the coated tomato slices until brown on both sides.

Season to taste.
