Starving-Student Green Chili Black Beans
1 tablespoon of extra-virgin olive oil
1 medium onion, finely chopped
2 (16-ounce) cans of black beans, drained and rinsed
1 (4- or 7- ounce) can of chopped mild green chilies
Heat the oil in a large saucepan. Add the onion and saute over medium heat until golden.
Add the beans and 1/4 cup of water. Cook over medium heat until the mixture comes to a gentle simmer.
Remove 1/2 cup of the beans, mash them, and then return them to the saucepan.
Simmer gently for another 5 minutes to make such everything is well heated.
Serve.
