Onion and Orange Salad


This recipe will make one nice lunch salad. A whole onion will make two salads.

1/2 of a medium red onion
1 orange
Salt to taste
Extra-virgin olive oil
Freshly ground black pepper to taste
A few black olives

Cut the onion into 1/4-inch half-moon slices. If you are not using a red onion, soak the slices in cold water for 20 minutes, discard the water and pat dry.

Peel the orange and trim away the white pith. Separate the orange in to wedges and then cut each wedge in half.

Toss the onion and the oranges together in a bowl.

Sprinkle the salad with salt and then drizzle with some oil.

Grind on some black pepper.

Garnish with some olives.

Serve.
